Wacky Cake Recipe

When I was a child my grandmother made a cake we all loved called” Wacky Cake”. This easy cake is mixed and baked in the same pan and uses no eggs which have been in short supply in some grocery stores. This recipe has a “wacky” method that children can easily participate in by measuring, pouring and stirring. All the family can enjoy the eating! I hope you enjoy my grandmother’s recipe.

Wacky Cake

  • 1 ½ cup flour

  • 1 cup sugar

  • 3 Tbsp cocoa

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 1/3 cup vegetable oil

  • 1 Tbsp vinegar

  • 1 tsp vanilla

  • 1 cup warm water

INSTRUCTIONS:

1. Preheat oven to 350 degrees.

2. In an ungreased 8-inch square pan, combine flour, sugar, cocoa, baking powder, baking soda and salt. Mix thoroughly.

3. Level off and make 3 holes in the mixture; pour oil into one, vinegar into the second and vanilla into the third. Pour warm water over all; mix thoroughly with a fork.

4. Bake 30 minutes or until tester inserted in center comes out clean.

5. Let cool, and then ice with your favourite icing recipe.
